Between Five Bells are the last three words in the first stanza of Kenneth Slessor’s famous poem, Five Bells. The poem is understood to tell the tale of the death of Joe Lynch, a friend of the poets, and is set around Sydney Harbour. It’s a poem about place and the spirit of place and central to the way the team think about the Between Five Bells (B5B) wines. To make the Between Five Bells Pinot Wine, whole bunches of Mariafeld clone Pinot Noir are carefully placed in a 5000lt cuve. A small amount of fermenting Pinot Meunier and Pinot Gris juice is introduced into the bottom of the tank. This allows the intact berries to be enveloped by CO2, allowing a true carbonic maceration. The sheer weight of the fruit above crushes the berries at the bottom allowing more sweet juice to join the ferment.
