The Mount Horrocks Watervale Riesling vineyard is a beautiful south facing, high altitude location that Stephanie chose more than two decades ago. It was a surprising choice back then, but now, many are praising the merits of these cool vineyard sites, especially for riesling. The grapes were all hand picked in the cool of the morning, cool crushed and destemmed with only the free run juice used. The must was fermented by neutral yeasts in stainless steel tanks and fermented to dryness. No malolactic fermentation occurred to allow the pure expression of the variety and single vineyard site to shine through. The wine was bottled without fining. It is a youthful lime green in colour which will develop over time. Displaying aromas of delicate spring blossom and lime leaf with a hint of vanillin spice. Crunchy green apple and crisp, vibrant distinctive lemon-lime citrus flavours abound, at once juicy and tangy. Almost ethereally light and elegant; its minerality wafting along the palate to a long, pleasing close.
